Ingredients

Salad

  • ½ cup arugula
  • ½ cup sliced fresh strawberries
  • 1 pear, thinly sliced
  • 1 apple, thinly sliced
  • 1 cup sliced peaches or watermelon chunks
  • ¼ cup crumbled feta cheese
  • ½ small red onion, thinly sliced

Balsamic Strawberry Dressing

Directions

  1. Arrange arugula on a large serving platter or in a wide salad bowl.
  2. Layer strawberries, pear, apple, and peaches or watermelon over the arugula.
  3. Scatter crumbled feta and red onion over the top.
  4. In a small bowl or jar, whisk together olive oil, balsamic vinegar, and Balsamic Strawberry Jam until smooth and emulsified. Season with salt and pepper.
  5. Drizzle dressing over the salad just before serving. Toss lightly or serve undressed and let guests add their own.

Tips & Notes

  • Dress at the last minute: Add the dressing right before serving to keep the arugula from wilting.
  • Make the dressing ahead: The dressing keeps in an airtight jar in the fridge for up to 1 week — shake well before using.
  • Swap the fruit: Use whatever is ripe and in season — mango, blueberries, or grapes all work beautifully.
  • Add protein: Top with grilled chicken, shrimp, or candied pecans to make it a full meal.
  • Serving tip: Build the salad on a large flat platter for a stunning presentation at summer gatherings.
