Ingredients
For the Pulled Pork
- 3–4 pounds pork shoulder (bone-in or boneless)
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ cup chicken broth
For the Chipotle Blackberry BBQ Sauce
- ½ cup Mrs. Ruth's Chipotle Blackberry Jam
- ¼ cup apple cider vinegar
- 2 tablespoons ketchup
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- Pinch of cayenne (optional, the jam already brings some heat)
For the Quick Slaw
- 2 cups shredded coleslaw mix
- 2 tablespoons mayonnaise
- 1 tablespoon apple cider vinegar
- 1 teaspoon sugar
- Salt and pepper to taste
To Serve
- 12–16 slider buns, split and toasted
- Bread and butter pickles
Directions
- Rub pork shoulder all over with salt, pepper, smoked paprika, garlic powder, and onion powder.
- Place in a slow cooker with chicken broth. Cook on low for 8 hours or high for 5 hours until fall-apart tender.
- Meanwhile, whisk together all BBQ sauce ingredients in a small saucepan over low heat. Simmer 5 minutes until slightly thickened. Set aside.
- Toss slaw ingredients together and refrigerate until ready to serve.
- Remove pork and shred with two forks, discarding any large fat pieces. Toss shredded pork with the Chipotle Blackberry BBQ sauce until well coated.
- Toast slider buns cut-side down in a buttered skillet until golden.
- Pile pork onto buns, top with slaw and a pickle, and serve immediately.
