Ingredients
- 1 sheet frozen puff pastry, thawed
- 1 wheel brie (8 oz), rind on
- 1/2 cup Mrs. Ruth's Balsamic Fig Jam, plus more for serving
- 1/4 cup toasted walnuts or pecans, roughly chopped
- 1 tablespoon fresh thyme leaves
- 1 egg, beaten (for egg wash)
- Flaky sea salt for finishing
- Crackers, sliced baguette, apple slices, and grapes for serving
Directions
- Preheat oven to 400°F. Line a baking sheet with parchment paper.
- Unfold puff pastry on a lightly floured surface. Place the brie wheel in the center.
- Spoon Balsamic Fig Jam generously over the top of the brie. Scatter toasted nuts and thyme leaves over the jam.
- Fold the pastry up and over the brie, pleating as needed to enclose it fully. Press to seal. Flip seam-side down onto the prepared baking sheet.
- Brush all over with egg wash. Score the top lightly with a knife if desired.
- Bake 22–25 minutes until deep golden brown and puffed.
- Let rest 5 minutes before serving — this allows the cheese to settle slightly so it doesn’t pour out immediately when cut. Finish with a pinch of flaky sea salt.
- Serve with crackers, baguette slices, apple slices, and grapes. Spoon extra Balsamic Fig Jam alongside for dipping.

- No puff pastry? Bake the brie unwrapped in a small cast iron skillet at 375°F for 12–15 minutes — still stunning, and even easier.
