- 1/2 cup unsalted butter, softened
- 1 cup plain whole-milk Greek or Icelandic yogurt
- 1 large egg, at room temperature
- 1 teaspoon almond extract
- 1 cup Mrs. Ruth's Simply Peach Jam
- 2 small fresh peaches, peeled, pitted, and sliced
Directions
- Preheat oven to 350°F. Lightly grease a 9-inch springform pan.
- Whisk flour, sugar, baking powder, cinnamon, salt, and baking soda together in a large bowl until thoroughly combined.
- Cut in butter until the mixture resembles coarse crumbs. Reserve 1 cup of the crumb mixture for the topping.
- Stir yogurt, egg, and almond extract into the remaining crumb mixture until the batter is thoroughly combined.
- Pour batter into the prepared pan and press evenly into the bottom and 1 inch up the sides.
- Spread Mrs. Ruth's Simply Peach Jam in an even layer over the center of the batter.
- Top jam with an even layer of sliced fresh peaches.
- Sprinkle the reserved 1 cup crumb topping evenly over the peaches.
- Bake until golden brown, 45–50 minutes or until cake tester inserted in center comes out clean.
- Cool 20 minutes, then gently run a knife around the edges and remove the springform sides.
- Cool completely before slicing.
