Ingredients
- 4 slices soft white bread, crusts removed
- 4–6 tablespoons Mrs. Ruth's Special Reserve Raspberry Jam (or your favorite Mrs. Ruth's variety — see swaps below)
- 1 cup fresh fruit matchsticks (raspberries, kiwi, and mango all work beautifully)
- 1–2 tablespoons cream cheese or mascarpone, softened (optional, for richness)
- 1 tablespoon sesame seeds or shredded coconut, for topping (optional)
Directions
- Use a rolling pin to flatten each slice of bread until thin and flexible.
- Spread a thin, even layer of jam over each slice. If using cream cheese or mascarpone, add a thin line along one edge.
- Arrange fruit matchsticks in a line along the same edge as the cream cheese — this will become the center of the roll.
- Starting at the fruit edge, roll the bread into a tight log. Press gently along the seam to seal.
- Using a sharp knife, slice each roll into 4–5 bite-sized pieces.
- Arrange on a platter, sprinkle with sesame seeds or shredded coconut if using, and serve immediately.
Tips & Notes
- Flatten thoroughly: The thinner the bread, the tighter and cleaner the roll. Take your time with the rolling pin — it makes a real difference in the final look.
- Don't overfill: A thin layer of jam and a small line of fruit is all you need. Too much filling and the roll won't seal cleanly.
- Sharp knife matters: Use a sharp serrated knife and a gentle sawing motion to get clean slices without squashing the roll.
- Serve immediately: These are best fresh. The bread softens quickly once assembled, so slice and plate right before serving.
