Ingredients

Directions

  1. Chill your mixing bowl in the freezer for 10–15 minutes before starting.
  2. Pour the heavy cream into the chilled bowl and whip on medium speed until it holds firm peaks, about 2–3 minutes. Watch closely — don't overwhip.
  3. In a separate bowl, stir together the sweetened condensed milk, vanilla, and salt.
  4. Fold about 1 cup of the whipped cream into the condensed milk mixture to lighten it. Then gently fold the lightened mixture back into the remaining whipped cream until just combined — don't deflate the cream.
  5. Pour about 1 inch of the ice cream base into a 9x5 loaf pan.
  6. Drop spoonfuls of Mrs. Ruth's Belgian Chocolate Cherry Jam over the base layer.
  7. Continue layering the remaining ice cream base and jam, finishing with a few drops of jam on top.
  8. Cover tightly with plastic wrap and freeze until firm, at least 4 hours or overnight.
  9. Let the ice cream soften at room temperature for 10 minutes before scooping. Serve and enjoy.

Tips & Notes

  • Chill everything: A cold bowl and cold cream whip faster and hold their structure better — don't skip this step.
  • Fold gently: The key to creamy no-churn ice cream is keeping as much air in the whipped cream as possible. Fold slowly and don't overmix.
  • Overnight is best: Four hours works, but overnight gives a firmer, scoopable texture with better flavor.
  • Storage: Cover tightly and store in the freezer for up to 2 weeks. Press plastic wrap directly onto the surface to prevent ice crystals.
