Blackberry Jam Crostata

Mrs. Ruth’s Blackberry Jam Crostata

A crostata is the rustic Italian cousin of a tart — buttery, crumbly shortbread pressed into a pan, filled with jam, and topped with crumbled dough and toasted almonds. Mrs. Ruth's Simply Blackberry Jam makes this one sing: deep, jammy, and perfectly balanced by the almond-scented crust. It looks like it came from a bakery and comes together with pantry staples in about 90 minutes.

Recipe Details

Prep Time: 20 minutes + 20 minutes to chill
Cook Time: 38–48 minutes
Total Time: About 1½ hours
Servings: 8

Ingredients

  • 1½ cups all-purpose flour
  • ¾ cup whole wheat flour (or almond flour)
  • 1½ sticks (12 tablespoons) unsalted butter, softened
  • ½ cup granulated sugar
  • 2 large egg yolks, room temperature
  • 1 teaspoon vanilla extract
  • ¼ teaspoon almond extract
  • ½ teaspoon fine sea salt
  • ⅓ cup sliced almonds
  • 1 (10 oz) jar Mrs. Ruth's Simply Blackberry Jam

Directions

  1. Whisk together both flours in a bowl and set aside.
  2. In a separate bowl, beat butter and sugar together until pale and fluffy, about 3 minutes.
  3. Beat in egg yolks, vanilla extract, almond extract, and salt until combined.
  4. Add the flour mixture and mix until a soft dough forms.
  5. Divide the dough in half. Press one half evenly into the bottom and up the sides of a 9–10” tart pan. Wrap the remaining half and refrigerate both for 20 minutes.
  6. Preheat oven to 350°F.
  7. Spread Mrs. Ruth's Simply Blackberry Jam evenly over the chilled crust.
  8. Remove the reserved dough from the fridge and crumble it over the jam in rough, uneven pieces.
  9. Sprinkle sliced almonds evenly over the top.
  10. Bake for 38–48 minutes until deep golden brown. Cool completely before slicing.

Tips & Notes

  • Don't skip the chill: Chilling the dough firms it up so the crust holds its shape and the crumble stays crumbly rather than melting flat.
  • Press evenly: Use the bottom of a measuring cup to press the crust into an even layer for consistent baking.
  • Jam options: Mrs. Ruth's Peach Jam, Orange Fig Marmalade, or Very Berry Jam all work beautifully as swaps.
  • Storage: Refrigerate leftovers covered for up to 4 days. Bring to room temperature before serving for the best texture.

Flavor Pairings We Love

  • Serve with: A dollop of fresh whipped cream or a scoop of vanilla ice cream
  • Pair with: A cup of Earl Grey or a glass of Prosecco for a proper Italian-inspired dessert moment
  • Try also: A dusting of powdered sugar over the top just before serving for a bakery-worthy finish
