Ingredients
- 2 pounds medium rainbow carrots, sliced diagonally
- 3 tablespoons unsalted butter
- 5 ounces Mrs. Ruth's Orange Marmalade or Mrs. Ruth's Orange Fig Marmalade
- 3/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/8 teaspoon ground cloves (optional)
Directions
- Place carrots in a large saucepan and add enough lightly salted water to cover.
- Bring to a boil over high heat.
- Reduce heat and cook, uncovered, until just tender, 8–10 minutes.
- Drain and return carrots to the pan.
- Add Mrs. Ruth's Orange Marmalade Jam, butter, salt, pepper, and ground cloves (if using).
- Cook over medium-high heat, stirring occasionally, until carrots are glazed and coated, 2–3 minutes.
- Serve immediately alongside roasted chicken, holiday ham, or your favorite main.
