Prep Time: 15 minutes | Cook Time: 2.5–3 hours | Total Time: 3 hours 15 minutes | Servings: 4–6
Ingredients
- 1 rack baby back ribs (about 2.5–3 lbs)
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ cup Mrs. Ruth's Chipotle Blackberry Jam, divided
- 1 tablespoon apple cider vinegar
- Fresh blackberries and chopped parsley, for garnish
Directions
- Preheat oven to 300°F. Remove the membrane from the back of the ribs.
- Combine salt, pepper, smoked paprika, garlic powder, and onion powder. Rub all over both sides of the ribs.
- Wrap ribs tightly in foil and place on a baking sheet. Bake for 2.5 hours until tender.
- Meanwhile, whisk together ¼ cup of the jam with apple cider vinegar to make the glaze.
- Remove ribs from foil. Brush generously with the glaze.
- Increase oven to 425°F (or move to a hot grill) and cook uncovered for 10–15 minutes until the glaze is caramelized and sticky.
- Rest for 5 minutes, slice, and serve with remaining jam on the side.
Tips & Notes
- Low and slow is key: The long oven time ensures fall-off-the-bone tenderness before the glaze goes on.
- Grill finish: A few minutes over direct flame adds beautiful char and smokiness that complements the chipotle.
- Make it a meal: Serve alongside coleslaw, cornbread, or roasted sweet potatoes.
- Heat level: The chipotle brings a warm, smoky heat — not fiery. Add a pinch of cayenne to the rub if you want more kick.
