Ingredients
- 1 pint good-quality vanilla ice cream
- ½ cup Mrs. Ruth’s Simply Blueberry Preserves
- 2 tablespoons water
- ¼ cup toasted pecans or walnuts, roughly chopped
- Flaky sea salt for finishing
- Fresh blueberries and fresh mint for garnish (optional)
- Waffle cone pieces or shortbread cookies for serving (optional)
Directions
- In a small saucepan over low heat, warm Simply Blueberry Preserves with water, stirring until loose and saucy — about 3–4 minutes. Don’t boil; just warm through. (or microwave for about 10 seconds at a time until warm)
- Scoop vanilla ice cream into bowls or glasses.
- Spoon warm blueberry sauce generously over the top.
- Scatter toasted pecans over the sauce. Finish with a pinch of flaky sea salt.
- Garnish with fresh blueberries and mint if desired. Serve immediately.
