Two ingredients, twenty minutes, and a salmon fillet that tastes like it came from a restaurant. Mrs. Ruth's Roasted Pineapple Habanero Chutney whisked with soy sauce creates a glaze that caramelizes beautifully in the oven — sweet, savory, sticky, and just warm enough from the habanero to keep things interesting. It works on any cut of salmon and requires almost no effort. This is the weeknight dinner that makes people think you've been cooking for hours.
Prep Time: 5 minutes | Cook Time: 15 minutes | Total Time: 20 minutes | Servings: 4
Ingredients
- 4 salmon fillets (6 oz each), skin-on or skinless
- 3 tablespoons Mrs. Ruth's Roasted Pineapple Habanero Chutney
- 1½ tablespoons soy sauce (or tamari for gluten-free)
- 1 teaspoon sesame oil (optional)
- 1 garlic clove, minced (optional)
- Flaky sea salt and cracked black pepper
- Fresh scallions and sesame seeds for garnish
Directions
- Preheat oven to 400°F. Line a baking sheet with foil and lightly oil it.
- In a small bowl, whisk together the chutney, soy sauce, sesame oil, and garlic if using.
- Pat salmon fillets dry with paper towels and season lightly with salt and pepper.
- Place salmon on the prepared baking sheet. Spoon or brush the glaze generously over the top of each fillet.
- Bake for 12–15 minutes, until the glaze is caramelized and the salmon flakes easily with a fork. For a deeper caramelization, broil for the last 2 minutes — watch closely.
- Garnish with sliced scallions and sesame seeds. Serve immediately over steamed rice, noodles, or alongside roasted vegetables.
Tips & Notes
- Don't skip the pat-dry step: Dry salmon takes the glaze better and caramelizes more evenly. Wet fish steams instead of roasting.
- Broil for the finish: The last 2 minutes under the broiler transforms the glaze from sticky to lacquered. Keep a close eye — it can go from perfect to burnt quickly.
- Thickness matters: Thinner fillets (under 1 inch) will cook in 10–12 minutes; thicker center-cut fillets need the full 15. Check for doneness by pressing gently — it should flake at the thickest point.
- Make it a sheet pan meal: Add broccoli florets, snap peas, or sliced bell peppers to the baking sheet alongside the salmon. Toss with a little oil and salt and roast together.
- Jam swaps: Mrs. Ruth's Chipotle Blackberry Jam gives a smoky-sweet glaze that's exceptional on salmon; Balsamic Fig Jam + soy sauce creates a more elegant, wine-bar flavor profile.
