Ingredients
- 2 large flour tortillas (8–10 inch)
- 4 tablespoons Mrs. Ruth's Very Berry Jam
- ½ cup whole-milk ricotta (or cream cheese, softened)
- 1 tablespoon unsalted butter
- Optional: powdered sugar, fresh berries, or honey for serving
Directions
- Lay each tortilla flat. Spread a thin, even layer of ricotta over one half of each tortilla.
- Spoon the Very Berry Jam over the ricotta layer and spread gently to cover.
- Place another tortilla on top.
- Melt butter in a large skillet over medium heat until foamy.
- Add the quesadillas and cook until golden and crispy on the bottom, about 2–3 minutes. Flip and cook the other side until equally golden, another 2–3 minutes.
- Transfer to a cutting board, let rest 1 minute, then cut each into 3 wedges.
- Serve immediately with a dusting of powdered sugar, fresh berries, or a drizzle of honey alongside.
Tips & Notes
- Don't overfill: A thin layer of ricotta and jam is all you need. Too much filling and the quesadilla won't seal properly and the jam will leak into the pan and burn.
- Medium heat is key: Too high and the outside burns before the inside warms through. Medium heat gives you an even golden crust with a melty center.
