Ingredients
- 1 pound chicken thighs or drum sticks

- 1 tablespoon olive oil
Directions
- Preheat oven to 425°F.
- Heat olive oil in an oven-safe skillet or pan over medium-high heat. Lightly brown the chicken on both sides, about 2–3 minutes per side.
- Remove chicken to a casserole dish or serve it from the skillet.
- Spoon Mrs. Ruth's Chipotle Blackberry Jam generously over each piece of chicken, coating evenly.
- Cover the dish with a lid or aluminum foil.
- Bake until the chicken is cooked completely through and the glaze is bubbling, about 20–25 minutes. Test for doneness with a meat thermometer — internal temperature should reach 165°F.
- Remove the cover for the last 5 minutes to caramelize the glaze. Serve immediately.
