Mrs. Ruth’s No Bake Strawberry Icebox Pie

Cool, creamy, and no-bake — this Strawberry Icebox Pie layers a cream cheese filling with fresh strawberries, pecans, and Mrs. Ruth's Simply Strawberry Jam in a golden graham cracker crust. Freeze until ready to serve.

Ingredients

  • 2 prepared graham cracker crusts (chocolate graham cracker crust also works great)
  • 1 (4 oz) package cream cheese, softened
  • 1 can sweetened condensed milk (such as Eagle Brand)
  • 1 cup whipped cream or prepared whipped topping
  • 1 lb fresh strawberries, mashed or sliced
  • ⅓ cup finely chopped pecans
  • 1 (10 oz) jar Mrs. Ruth's Simply Strawberry Jam
  • ½ cup whipped cream, for garnish
  • ½ cup prepared fudge sauce (optional)

Directions

  1. Beat cream cheese until smooth and fluffy.
  2. Add sweetened condensed milk and beat until fully combined and smooth.
  3. Fold in the mashed or sliced strawberries and chopped pecans.
  4. Gently fold in the whipped cream or whipped topping until just combined.
  5. If using fudge sauce, spread an even layer across the bottom of each crust.
  6. Divide the filling evenly between the two crusts.
  7. Spoon Mrs. Ruth's Simply Strawberry Jam generously over the top of each pie.
  8. Freeze until firm and ready to serve.
  9. Garnish with whipped cream just before serving, if desired.
