Ingredients
- 1 pound peeled and deveined shrimp
- 2 tablespoons olive oil
- ½ cup Mrs. Ruth’s Orange Marmalade, divided
- ¼ cup green onions, sliced
- Salt and pepper to taste
Directions
- Heat olive oil in a large skillet over medium heat until shimmering.
- Add shrimp in a single layer. Cover and cook 2–3 minutes until the shrimp begin to turn pink on the bottom.
- Add ¼ cup of the Orange Marmalade and stir to coat. Continue cooking uncovered, stirring occasionally, until shrimp are just opaque throughout — about 2–3 more minutes. Do not overcook.
- Stir in the remaining ¼ cup of marmalade for a fresh burst of flavor and gloss.
- Season with salt and pepper. Transfer to a serving dish and top with sliced green onions. Serve immediately.
Tips & Notes
- Don’t overcook the shrimp: Shrimp cook fast — pull them off the heat as soon as they’re opaque and curled into a C shape. An O shape means overcooked.
- Add the marmalade in two stages: The first addition glazes and caramelizes; the second keeps the sauce bright and fresh.
- Serving ideas: Serve over steamed jasmine rice, toss with linguine, or arrange on a platter with toothpicks as an appetizer.
- Spice it up: Add a pinch of red pepper flakes or a dash of sriracha for a sweet-heat version.
