Mrs. Ruth's Yogurt and Jam Pops

Creamy, jammy, and just the right amount of indulgent — these yogurt pops layer tangy Greek yogurt, Mrs. Ruth's Strawberry Lemonade Jam, and crushed graham crackers into a frozen treat that tastes like strawberry cheesecake on a stick. Make them the night before and pull them straight from the freezer. Summer sorted.

Ingredients

  • 1 cup Heavy Cream
  • ½ cup Granulated Sugar
  • teaspoon Kosher Salt
  • 2 cups Plain, Full-fat, Greek or Icelandic Yogurt
  • cup Mrs. Ruth's Strawberry Lemonade Jam
  • cup Smashed Graham Crackers
  • 10 Popsicle Sticks

Directions

  1. Have a 10-pop popsicle mold ready to fill. 
  2. In a small saucepan, combine the cream, sugar and salt over medium-low heat.
  3. Cook and stir until the sugar has dissolved, about 3 minutes. 
  4. Pour into a large bowl and let cool completely.
  5. Add the yogurt to cream mixture and stir thoroughly to combine.
  6. Using a large spoon, place the ingredients evenly among the molds, alternating between the yogurt mixture, the jam, and the graham crackers. 
  7. Use a butter knife to swirl everything being careful to avoid overmixing.
  8. Cover and freeze for 1 hour. After 1 hour, add the popsicle sticks and continue to freeze until solid, at least 8 hours.
  9. To unmold, briefly dip the mold in hot water a few times just until the pops can be pulled out.
