This isn't your childhood grilled cheese. The sweet-savory depth of Mrs. Ruth's Balsamic Onion Chutney melts into sharp cheddar and nutty Gruyère between two slices of crispy sourdough, creating a sandwich that's equal parts comfort food and gourmet treat. It's the kind of thing you make for lunch and then immediately want to make again.

Cook Time: 10 minutes
Total Time: 15 minutes
Servings: 2
Ingredients
- 4 slices sourdough bread
- 3 tablespoons Mrs. Ruth's Balsamic Onion Chutney
- 4 oz sharp cheddar cheese, thinly sliced
- 3 oz Gruyère cheese, thinly sliced
- 2 tablespoons unsalted butter, softened
- Flaky sea salt, to taste
- Fresh thyme leaves for garnish (optional)
Directions
- Spread a generous layer of Mrs. Ruth's Balsamic Onion Chutney on one side of each of two bread slices. You want enough to taste it in every bite but not so much that the bread gets soggy.
- Layer half the cheddar and half the Gruyère over the chutney on each sandwich. Top with the remaining bread slices.
- Butter the outside of both sandwiches on all four outer sides. Don't skimp — this is what gives you that golden, crispy crust.
- Heat a large skillet or griddle over medium-low heat. A lower temperature ensures the cheese melts evenly while the bread crisps up without burning.
- Place the sandwiches in the skillet and cook for 4–5 minutes on the first side, pressing gently with a spatula, until deep golden brown.
- Flip carefully and cook for another 4–5 minutes until the second side is equally golden and the cheese is fully melted and oozing.
- Remove from the skillet and let rest for 1 minute — this helps the cheese settle just enough so it doesn't slide out completely when you cut.
- Cut each sandwich in half diagonally, sprinkle with flaky sea salt and fresh thyme leaves if using, and serve immediately.
Tips & Notes
- No Gruyère? Substitute fontina, raclette, or a good mozzarella for that melty pull.
- For a heartier version: Add thinly sliced apples or pears inside the sandwich — they pair beautifully with the onion chutney.
- Cast iron is king: Use a cast iron skillet for the most even, crispy crust.
- Soup season: Serve with a bowl of tomato soup for the ultimate comfort meal.
- Storage: Best eaten fresh. Leftovers can be reheated in a skillet over medium-low heat for 2–3 minutes per side.
